Steps to make Milky Veg Rice:
  1. Measure the rice and prepare coconut milk in 1:2 ratio (for 1 cup rice, add 2 cups of coconut milk). If you don't need coconut milk, add water.
  2. Heat the oil in pressure cooker, add cinnamon, bay leaf, cloves and cardamom. After few seconds, add onion, green chillies, ginger garlic paste and saute for 2 minutes.
  3. Add mint and coriander; peas and carrot beans and capsicum mixture. Saute for 5 minutes. Then add coconut milk as per the ratio, washed rice, curd and salt. Close the pressure cooker.
  4. After 2 whistles, leave the cooker for 2 minutes in low flame. Before serving add ghee in the rice.
